This ash is produced from burnt vegetable matter which has been steam sterilised to produce activated carbon. It meets the purity criteria of food coloring E153 described in the European Directive 2008/12 / EC.
This is pure ash which if used as a surface application can either be mixed with salt or applied after you have salted your cheese.
Traditionally, the cheeses from France’s Loire Valley are known for having ash in their coatings. Well known examples, all goats cheeses, include Selles sur Cher, Valencay and St Maure.
Each bag contains 70g of ash. The bag is double sealed and you will need to cut below the heat seal before using and then you can reseal using the snap seal. Take care as this is a very fine dust which is easily airborne. Clean up is easy using water and dishwash liquid.
